I ran into the exact same undefined references when trying to compile libbtctl after having installed openobex-1.0.1. Downgrading to openobex-1.0.0 resolved this issue and allowed me to emerge libbtctl as well as gnome-bluetooth (both of which are currently marked x86) on my amd64 system. I am not sure if marking openobex-1.0.0 as ~amd64 alone will be sufficient, though. It seems to me that there is a deeper problem with the 1.0.1 version that should be fixed. The ~amd64 keyword should probably be removed from 1.0.1 until we have a resolution to this problem. I am curious if this is truly an amd64 specific issue or if this happens on x86 as well.
