I wish the openttd ebuild had a dedicated server option.
buildt with DEDICATED=1 RELEASE:=$PV WITH_NETWORK=1

I have created an updated ebuild which does what you wish. It also notes the user to OpenTTD 0.3.5 being able to use the TTD DOS data files.

Thanks for the ebuild. Added support for dedicated server to openttd 0.3.6. I also included an init script, please help me test it.
