At the time the luajit use flag is masked in profiles/base/package.use.mask for minetest with note:

# luajit is in ~arch, prepare for minetest stabilization
games-action/minetest luajit

But the dev-lang/luajit is already stable so I see no reason to leave it masked.
I did unmasked locally and recompiled minetest with luajit some times ago. The game gets a performance boost and does work without any issues since months for me (tested with minetest-0.4.15 and 0.4.16) so I think this should be enabled by default
