It might be that enabling ffmpeg USE is required for this bug to manifest, though upstream has http://bugzilla.audacityteam.org/show_bug.cgi?id=1315, which is fixed with https://github.com/audacity/audacity/commit/7ced70c2101fadcf1ff981beec01c7bfbbdb2e99.  A backport of the patch is attached.

File extension defaults to aiff

File extension defaults to the type selected
