Simply renaming the media-plugins/gimp-gmic-1.6.0.4 ebuild is not enough as the patch fails to apply and it fails to install without the patch:
>>> Install gimp-gmic-1.6.1.0 into /var/tmp/portage/media-plugins/gimp-gmic-1.6.1.0/image/ category media-plugins
make -j8 DESTDIR=/var/tmp/portage/media-plugins/gimp-gmic-1.6.1.0/image/ install-gimp 
make: *** No rule to make target 'install-gimp'.  Stop.

I had no luck getting it running yet, I hope someone more savvy with G'MIC code can figure it out.
BTW would the patches portage applies not be of use upstream?

I confirm gimp-gmic-1.6.2.0 compiles and runs well with the patch.
Again, wouldn't this patch better go upstream?
