<media-plugins/alsa-plugins-1.0.27-r2 allows to use "PULSE_SERVER=10.0.0.1 mplayer foo" for example to let mplayer use the pulseaudio server at 10.0.0.1. 

with version media-plugins/alsa-plugins-1.0.27-r2 this doesn't work anymore and the pulseaudio server at 127.0.0.1 is allways used.

Oh wait. -r2 was broken, so it was removed and replaced by -r3. Could you try with -r3?
