Not having media-libs/freetype causes a configure error since the ebuild forces --enable-grub-mkfont. Emerging it manually fixes the issue, so grub should depend on media-libs/freetype.

i'm using paludis, so a build.log is slightly difficult, but it simply outputs this:

...
checking if _end is defined by the compiler... yes
checking whether addr32 must be in the same line as the instruction... yes
checking for .code16 addr32 assembler support... yes
checking whether an absolute indirect call/jump must not be prefixed with an asterisk... no
checking for freetype-config... no

configure: error: grub-mkfont was explicitly requested but can't be compiled

...

and as said, installing media-libs/freetype fixes this problem.
