Something's seriously broken there, it is trying to pull in Windows includes. Please attach your config.log. WTF?! O_o
Ok, I'd like to give you the file you need, but I don't know what config.log you mean ("locate config.log" returns irrelevant files). Do you possibly mean emerge.log?

I have /var/tmp in my locate prune path. Ok, I've attached the file. The configure script finds windows.h on your system, and I guess this is where the excrement hits the fan. Investigating... Sounds strange... well, I do have a /usr/include/windows.h as symlink to the wine's windows.h... I don't know if I was trying something crazy there or if it was installed via Portage. :-/ However, I removed the link for now, and I'm reemerging sane-backends. I'll keep you updated. ... believe it or not: It worked. I successfully emerged sane-backends. I'm very sorry for the confusion, especially if it should turn out that it was caused by me messing around with the system. Thanks again for your efforts.
