Do they not do regular releases like everyone else in the world? No, no release manager for the project: http://wiki.openchrome.org/pipermail/openchrome-users/2006-March/000733.html Snapshots of the svn repository is probally the best way, until things get more stable. Openchrome has been adding new features and hardware support for over a year now. There is a gentoo wiki page on the svn building, but having an ebuild for a driver for the unichrome. Until then, feel free to stick in some overlay like sunrise and reopen this bug when they've got releases. Their website seems to be down, so I can't look at your link. It's working from here now.
