ps2pdf seems to only print out the first character of each word. This breaks the Print to PDF feature in KDE. I will attach examples.

app-text/ghostscript-esp-8.15.1_p20060430 works in some senses of the word. The output is usable but the text alignment is horrible. I don't think any two letters in the document line up.

I would like to install ghostscript-esp-7.07 because I have nice looking documents that I produced on a different machine with that version installed.

ghostscript versions have been updated all over the place. Please try if it happens still with the new ones. Also I suggest to report such bugs upstream.

It's not a problem of ghostscript, try to remove font embedding in qtconfig (Printer tab) as described in the following bug:

Sorry, it's really a problem of ghostscript.

Previously I tried with ghostscript-gpl-8.54, now I have just installed ghostscript-gpl-8.60 (see bug #187502 for an ebuild). Reenabling the font embedding with qtconfig and using KDE printing system I don't have anymore PDF rendering problems.
