I have been getting spam at my gentoo bugzilla address.  Is it possible for gentoo bugzilla to be modified to hide e-mail addresses?  Or at least munge them in some way before they are displayed?

No, sorry. Feature requests need to go upstream, we are NOT bugzilla programmers.
