That's because xorg-server doesn't have a xinerama USE flag, and I have no interest in adding one for a couple of reasons. Some core X packages break if built without xinerama, and if someone wants to enable it later, it's not clear that they would need to rebuild xorg-server to get other programs working properly. It's also not well-tested by the upstream developers to avoid building such core options. Ok, fair enough. It just seemed odd behaviour, that's all.
