Playing with uprading php under an UML linux I found, that I have to explicitly disable these 3 fonts flag. All 3 flags seem to depend directly onto xorg-x11, so disabling X11 using '-X' should disable the depended USE-flags automatically, isn't it ?

Not possible, sorry. There are no groups of flags available in portage.
