Following the desktop guide I can get courier-imap working just fine, but
neither Hallski nor I can seem to get courier-imap working w/ SSL.

Upgraded to the latest courier-imap (1.4.1); problem didn't go away.

Found the problem. Workaround until I make a new ebuild:

edit /usr/lib/courier-imap/imapd-ssl.rc and change "Maildir" on line 44 to read
${MAILDIR} instead, then /etc/init.d/courier-imap-ssl restart.

Changed severity to minor now that there's a workaround.
