What about passing --with-ntp-servers=<Insert default Gentoo NTP servers here>?
And IUSE="timesyncd" where USE="-timesyncd" means --disable-timesyncd

Thanks for the report.

I'm not going to make building timesyncd optional at this time, though I acknowledge that it might be a good idea.
