Bumped to the latest stable symfony release. Tested and works.

Also adds PHP version dependency[1] and the PEAR dependancy with the version the symfony channel was added to the PEAR ebuild. See bug #238973 . Some additional metadata has been added aswell.

symfony 1.2.0 was released last night, so attached is a version bump which I have tested and includes my fixes in previous bump also attached to this ticket.

Thanks for the ebuild. In cvs. I removed the PEAR dependency as that is already provided by the php. And I did remove some metadata elements as this did not validate.
