The category should be Graphics;Viewer; - this is not exactly an office app. :)
Plus, you should really bug upstream about such things, which should be
provided in the tarball accompanied by an icon for this.

I have just looked up other pdf viewers and they are categorized in Office too,
see adobe-reader and epdfview!
